Marinated Strip Loin Steak

(Makes 4 servings)

4  New York strip steaks, 1 inch (2.5 cm) thick

1 1/2 tablespoons    (22.5 mL)      fresh lime juice

3   cloves garlic, chopped fine

1/4 cup   (60 mL)      light soy sauce

2 tablespoons  (30 mL)      Dijon mustard

1/2 teaspoon    (2.5 mL)      hot sauce

1 tablespoon    (15 mL)      Worcestershire sauce

1 teaspoon       (5 mL)      black peppercorns

1/4 cup   (60 mL)      olive oil

Place the steaks in a large Ziploc bag.

Combine the lime juice, garlic, soy sauce, mustard, hot sauce, Worcestershire sauce, peppercorns and olive oil in a small bowl.  Whisk the ingredients together.  Pour the marinade over the steaks.  Seal the bag.  Turn and shake the Ziploc bag to cover the meat with the marinade.

Place the bag flat in the refrigerator.  Marinate for 24 hours.  Turn the bag once or twice while marinating.  Discard the marinade after using.

Preheat the barbecue on high for 10 minutes.  Oil the grate.  For medium-rare, barbecue the steaks with the lid closed for a total of 8 minutes, 4 minutes on each side.
