RVTV and The Cooking Ladies


COLD VEGETABLE CHILI
(Makes 3 servings)

19 ounces
(540 mL) can stewed
tomatoes
19 ounces (540 mL) can black beans,
drained
4 tablespoons
(60 mL) finely diced onion
4 tablespoons
(60 mL) mild salsa
1 1/2 teaspoons
(7.5 mL) chili powder
2 tablespoons
(60 mL) fresh lime juice

Place the stewed tomatoes in a
large bowl. Break up any large pieces with a sharp
knife.
Add the black beans, onion, salsa,
chili powder, and lime juice to the tomatoes.
Stir the ingredients together and
serve.
Per serving: 220 calories, 3 g
fat, 0 g saturated fat, 12 g protein, 38 g carbohydrate,
12 g fibre, 10 g sugar, 1160 mg sodium.
