COOL CANTALOUPE CUCUMBER MANGO SOUP
(Makes 4 servings)

1 mango
1 cantaloupe
1/2 cup (125 mL) fresh lemon juice
2 cups (500 mL) peeled seedless cucumber
1/2 teaspoon (2.5 mL) finely chopped fresh ginger
1/4 teaspoon (1.25 mL) white pepper
1/2 teaspoon (2.5 mL) salt

Peel the mango and cut the flesh
from the pit.
Peel and remove the seeds from the
cantaloupe. Cut the cantaloupe into chunks.
Cut the cucumber into chunks.
In a food processor, combine the
mango, cantaloupe, lemon juice, cucumber, ginger, white
pepper, and salt. Process until almost smooth.
Chill until ready to serve.
