Maple Salmon Cubes

(Makes 2 to 3 servings)

 

3/4 pound   (340 g) salmon fillets

1/2 cup   (125 mL)    maple syrup

2 tablespoons (30 mL)  dark rum

Remove any skin from the salmon fillets.  Trim away any dark spots.  Cut the salmon into 1-inch (2.5 cm) cubes.

         Combine the maple syrup and dark rum in a bowl.  Stir well.

         Marinate the salmon cubes in the maple syrup mixture for 1 to 2 hours in the refrigerator.

         Place a griddle on the barbecue grate.  Preheat the griddle on medium-high for 10 minutes.  Turn the heat to medium-low.

         Oil the griddle.  Place the salmon cubes side by side on the griddle.  Brush or lightly pour some of the marinade over the cubes.  Don’t let the griddle dry around the salmon.  Keep the lid up.  Continue to pour or brush the marinade over the cubes.

         After 5 minutes turn the salmon cubes over.  Brush more marinade on the griddle to keep the salmon moist.  Turn and baste the salmon until both sides are golden brown and the marinade is caramelizing on the griddle.  Remove the salmon before the marinade becomes very dark and bitter
